Recipe Zucchini Salad with mushrooms
- Heat the oven to 200 degrees.
- Divide the squash lengthwise and cut into slanted pieces.
- Scale and slice the onion.
- Scale and finely chop the garlic.
- Brush and slice the sponge.
- Chop the leaf parsley nicely (save the parsley stalks).
- Put the squash in an oven proof shape.
- Mix the squash with olive oil, onion powder, curry, paprika powder, salt and turn around. Prepare in the middle of the oven about 20 minutes.
- Fry the mushrooms on high heat. They will release a lot of liquid and reduce to more than half in volume, then allow the liquid to boil.
- Add the onion and fry a few more minutes, milling with garlic towards the end.
- Season with onion powder and salt.
- Dressing
- Core the chili fruit and chop it finely.
- Mix parsley stalks with olive oil.
- Add chili, grated lemon peel and pressed ½ lemon. Season with salt and freshly ground black pepper.
- Mix the roast squash with the roast mushrooms. Stir the dressing over and mix well.
