On the grill we use fresh mentha and lemon balm to smoke shrimp scampi. This Grilled Shrimp Scampi can be perfectly served as an appetizer or main dish. You may apply this recipe also for scallops. You may prepared ahead to marinade these delicious shrimp scampi which makes it an easy and quick dish to grill.

Ingredients in this recipe are:

Scampi(without shell) 500 g
Lime1
Chili pepper ½ needle
Lemongrass2 stalk
Lemon balm (fresh) 20 g
Garlic 1 cloves
Salt flakes 1 tbsp
Black pepper1 pinch
Oliv Oil 2 tbsp
Skewers(if wooden skewers, put into water to soak one hour before the barbecue) 4

Red pepper (preferably the longer, narrower variety)4 pieces
Lemon2
Oliv Oil 2 tbsp
Salt flakes 1 tbsp
Sesame seeds ½ cup

Recipe to Marinate and Grill Shrimp Scampi
  • Marinade:
  • Core and chop the chilli finely.
  • Finely chop the garlic and lemon balm.
  • Banka broken lemon grass and chop it.
  • Grate the zest from the limes, only the green because the white is bitter.
  • Mix together the chilli, garlic, lemon grass, lime zest and lime juice, lemon, salt, pepper and olive oil in a bowl.
  • Mix together the marinade ingredients.
  • Add the scampi in the mess and mix well, cover the bowl and marinate in the refrigerator for about 3 hours.
  • Accessories:
  • Toast the sesame seeds in a dry, hot pan until golden.
  • Share the peppers in half and seed them. Share lemon.
  • Mix the vegetables with olive oil and season with salt.
  • Grill:
  • Light the barbecue pit.
  • Take the scampi out of the marinade.
  • Wood up three shrimp per skewer, thread the tail and the back to form a U.
  • Nothing must hang loosely on the skewers.
  • Turn the skewers once during grilling, roast until they turn pink, a total of 3-5 minutes per side.
  • Sprinkle with sesame seeds.
  • Serve with grilled lemon halves, grilled peppers and potatoes.
