Milk1 lt
Muesli 2 dl
Wheat flour 13 dl
Leavening 50 g
Eggs 1
Cooking oil ½ dl
Salt 1 tsp
Cumin (crushed) 1 tbsp

StröSugar 2 tbsp
Eggs (whipped up) 1
⁞⁞⁞ Topping ⁞⁞⁞
Sesame Seeds 2 tbsp
Poppy Seeds2 tbsp
Sunflower Seeds2 tbsp

Recipes for Muesli Bread
  • Mix the muesli with 2 cups milk into a bowl and let stand at room temperature.
  • Heat the milk to 37 degrees (thumb warm).
  • Crumble the leavening into a dough bowl(household assistant).
  • Pour over a little of the milk and stir so that the leavening dissolves.
  • Add the remaining broth, egg, cooking oil, salt, caraway, muesli-mixture, sugar, and most of the flour.
  • Work the dough smooth, smooth (take any more flour) until the dough comes the bowl edges.
  • Sprinkle a thin layer of flour.
  • Let the dough rise covered with a cloth until doubled in size, about 1 hour.
  • Turn out dough onto floured surface and divide it into smaller pieces.
  • Roll round smooth fine buns, flatten them. Roll out the size you want.
  • I usually take it a little thicker so that one can share theme easily later.
  • Place them on baking sheet, greased or lined with baking parchment.
  • Prick them with a fork and let them then to rise at least 40 minutes under a cloth.
  • Preheat the oven to 225 °.
  • Brush with whipped egg and sprinkle with optional topings, if desired.
  • Bake the bread in the middle of the oven in about 15 minutes, until golden brown.
  • Let the bread cool down on a rack under a bake cloth.
