Here is recipe to make a tasty khoresh Kadoo.
khoresh Kadoo is a very popular squash (called zucchini) stew.
This squash stew is a typical summer stew from the Persian kitchen which is very easy to make.
It tastes spicy with a touch of sourish. You can serve it with rice or bread.

Beef (Roast beef or topside) | 500 g |

Butter | 25 g |
Canola oil (Liquid cooking oil) | 2 tbsp |
Onion | 1 |
Garlic cloves | 2 |
Tomato paste | 2 tbsp |
Turmeric (Curcuma longa) | 1 tsp |
Cinnamon | 1 tsp |
Sugar | 1 tsp |
Chili peppers | 1 tsp |
Smoked paprika | 1 tsp |
Veal stock (Brown) | 2 tbsp |
Dried limes | 1 pieces |
Saffron | 0.20 g |
Green squash (Small oblong) | 500 g |
Salt | 1 tsp |
Pepper | 1 tsp |
Water | 5 dl |

Recipe khoresh Kadoo
- Trim and cut the flesh into large chunks.
- Peel and finely chop the onion and garlic.
- Brown the meat with a little oil and butter in batches until nicely browned on all sides.
- Add the onion, garlic and fry them soft, about 2 minutes.
- Stir in the tomato puree, cinnamon, Chili peppers, smoked paprika, sugar and turmeric and let fry for a few minutes and mix well.
- Pour in veal stock and water to cover the meat.
- Put on the lid and let the stew simmer until meat is almost tender, it takes about 1 hour.
- Wash and peel the squash.
- Fry the courgettes in a little oil until golden.
- Crush lime and removing the cores.
- Add the roast squash, saffron and crushed lime to the pan and season with salt.
- Let the pot continue to simmer until the meat is really tender. It takes 1 hour.
- End of flavor with possibly a little more salt and pepper.
- Serve with boiled basmati rice.
