Recipe Herb Grilled Char Fish
- Marinate Char
- Mince dill.
- Clean and shred spring onions and leeks.
- Share and chop the chilli finely. Wash your hands to not irritate the eyes.
- Rinse the lime thoroughly in lukewarm water and grate the peel.
- Mix the chopped dill with spring onions, leek and chilli in a bowl.
- Add honey and olive oil. Season with salt.
- Stir and season - perhaps needed more lime, chili hot and salt? taste..
- Cut sections through the skin of the fish with 2 cm apart.
- Place the fish in a double plastic bag and pour the marinade.
- let them marinate in the refrigerator for about 1 hour.

- Herb Butter with Garlic
- Shred spring onion finely.
- Mix the basil, dill and spring onion. Add the grated lemon peel and squeeze the juice from the half lemon.
- Squeeze the garlic cloves and mix in the butter.
- Stir until it becomes smooth and fine.
- Season with sea salt.
- Add the butter on a piece of waxed paper.
- Roll up and twist the ends to a cracker.
- Let cool in the fridge for about 1 hour.
- Prepare during meantime
- Light the grill.
- Soak fresh mint or other fresh spice in water about 20 minutes.
- Take the fish and let it reach room temperature and drain.
- Break or cut the lower part of the asparagus.
- Rinse and clean the spring onions. Share the lemons in half.
- Touch and rub the vegetables with olive oil, salt and pepper.
- Grilling:
- Let charcoal burn down to an ashen embers.
- Add soaked fresh mint or other fresh spice directly above the coals.
- Grill Char fish skin side down.
- On the lid and let the grill for about 3 to 5 minutes on each side.
- Check then if it is cooked, preferably with a thermometer (47-50 C).Cook time could be different depending on the thickness of the fish and coal heat.
- Grill the vegetables and lemons around until golden.
- Serve the fish with the herb butter, Grill Vegetables and Grill Herb Potatoes.
